Pure Fresh grows a variety of colorful baby squashes on its model farms in Guatemala. These include Baby Zucchini and Green and Yellow sunburst squash. Available year round, with peak season from October through May, these gourmet squashes, an ancient food of Mesoamerica, are bagged for the individual consumer and packaged in bulk for the food service industry. The convenient individual bags, sold in retail markets and club stores, allow busy home cooks to microwave the squash in the bag.
Squashes are low in calories and contain no saturated fats or cholesterol. They are a good source of potassium, vitamin C, and dietary fiber, which helps digestion and protects against colon cancer.
Baby Squashes store well for as long as a week in the refrigerator or other cool, dry place.
Freeze Baby Zucchini and Patty Pan squashes by slicing and blanching them in boiling water, plunging in ice water, draining and drying, and storing in airtight freezer containers.
Baby squashes are delicious sliced and roasted in the oven or sautéed in a pan with garlic and oregano. Try microwaving your Pure Fresh baby squashes right in the bag! Baby Zucchini and Patty Pan squashes are delicious sliced or chopped and cooked with cherry tomatoes as well as garlic and basil. Get adventurous and pickle some whole Patty Pan squash.
