English peas store well in the refrigerator in their Pure Fresh bag for several days, but they will lose more of their sugar content the longer you keep them.

Do not overcook your Pure Fresh English peas or they will be mushy, starchy, and bland. Steam or boil in a small amount of lightly salted water to cover (use filtered water if your tap water is hard) for a few minutes until bright green.

Freeze English peas by steaming or blanching in boiling water for about a 90 seconds and plunging immediately in ice water to stop the cooking. Drain well and dry gently in a kitchen towel. Place in airtight container and freeze.

SERVING SUGGESTIONS

Pure Fresh English peas are enhanced by ham or prosciutto, mint, lettuce, garlic, or pearl onions, and, of course, butter. Sauté peas in butter or olive oil mixed with any of these flavorings. Peas are especially delicious when eaten with carrots, rice, or potatoes, or mixed with shell pasta and Parmesan. Get exotic and cook up some curried pea fritters. Or toss the peas into stews, soups, or casseroles.
