The plump, complex berries explode with juice in the mouth, so eating them fresh is the first choice of many. A little creaminess, in the form of milk or cream enhances the sweet-tart experience. A buttery blackberry pie flavored with nutmeg is an age-old favorite. Try making a blackberry fool with mashed blackberries and sugar, slightly heated and cooled, folded into sweetened whipped cream. Homemade blackberry jam spread on tangy goat cheese or brie creates a new taste sensation for appetizers. And a deep-flavored blackberry sorbet is divine and remarkably easy: lightly cook a sufficient quantity of berries with a little sugar, strain and adjust sugar to slightly too sweet (when frozen the berry mixture will be less sweet), add a teaspoon or so of tasteless vodka or other liquor to keep the icy sorbet smooth, and freeze in an ice-cream machine.
